exceptional culinary meeting in Paris

The Parisian institution of Indonesian gastronomy had to welcome Chef William Wongso in its kitchens during his visit to Paris.
Chef William Wongso is an Indonesian chef and culinary consultant specializing in the cuisine of his country, but also Asian and European. In 2001, the Minister of Agriculture named William Wongso Chevalier de l'Ordre National du Mérite for the role he has played in the promotion and influence of French gastronomy in Indonesia and in the World.
Author of half a dozen cookbooks translated into many languages, he is also an advisor to airlines such as Garuda for in-flight catering, as well as major luxury hotel chains.
Djakarta Bali, created in 1985 by A.M. Hanafi, ex-Minister and ex-Ambassador of the Republic of Indonesia exiled in Paris, following the Suharto coup in 1965. The restaurant Djakarta Bali is the oldest and most authentic Indonesian restaurant in Paris. For 20 years, it is Nin Hanafi - who is also the president of the Association of the Indonesian Diaspora in France - who took over from his father at the head of the restaurant.
Djakarta Bali has always hosted great personalities from all fields, such as Serge Gainsbourg, Grace Jones, Tim Burton, Catherine Deneuve, Chantal Thomass, Jean Charles de Castelbajac, and of course... the famous and talented Indonesian singer Anggun.
An exceptional meeting
And to pay tribute to this standard of the cuisine of the archipelago of 17,000 islands, Jakarta Bali, the oldest Indonesian restaurant in Paris, will organize an exceptional evening on Thursday, October 17, 2019 from 7:30 pm, during which the chef William Wongso, will take control of the stoves of the Parisian institution, to make the French discover his signature dish: the Rendang Wagyu, modern version of this emblematic dish prepared with this exceptional beef from Kobe, which will be offered within a tasting menu.

For several years in a row, it is an Indonesian dish that has been crowned: beef rendang.
Originally from Padang, a coastal town in West Sumatra, rendang is a dish prepared with beef, simmered very slowly and very long in a heady sauce made of coconut milk and a spice paste mainly composed of chili, garlic, ginger and lemongrass and other spices.
This emblematic dish of the Minangkabau ethnic group has become one of the most popular dishes in Indonesia and even... its Malaysian neighbors!
